Prepare the Filling

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and cook for an additional minute. Stir in the cooked chicken, ground beef, or steak, and season with salt and black pepper to taste. Cook until heated through.

Assemble the Enchiladas

Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a corn tortilla, fill it with the meat mixture, and sprinkle some shredded cheese on top. Roll the tortilla and place it seam-side down in the baking dish. Repeat until all tortillas are used.

Add Sauce and Cheese

Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top. Sprinkle the remaining cheese over the sauce.

Bake

Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve

Let the enchiladas cool for a few minutes before serving. Enjoy your cheese enchiladas hot!
