    Prepare the Filling

    In a bowl, combine the shredded chicken, diced sirloin, ground cumin, salt, and black pepper. Mix well and set aside.

    Assemble the Enchiladas

    Preheat your skillet over medium heat and add olive oil. Take a corn tortilla, fill it with the chicken and sirloin mixture, and sprinkle some cheddar and Monterey Jack cheese. Roll it up and place it seam-side down in the skillet. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Once all the enchiladas are in the skillet, pour the tomatillo sauce evenly over the top. Sprinkle the remaining cheeses and crumbled queso fresco on top.

    Bake

    Cover the skillet with a lid or aluminum foil and reduce the heat to low. Cook for about 15-20 minutes, until the cheese is melted and bubbly.
