Prepare the Shrimp
In a large bowl, combine the shrimp, olive oil, minced garlic, lemon juice, salt, and black pepper. Toss until the shrimp are evenly coated.

Marinate
Cover the bowl with plastic wrap and let the shrimp marinate in the refrigerator for 30 minutes.

Cook the Shrimp
Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated shrimp and grill for about 2-3 minutes on each side, or until they are pink and opaque.

Prepare Sauces
In separate serving bowls, prepare the Mayan coconut sauce, chimichurri sauce, and baja sauce for dipping.

Serve
Arrange the grilled shrimp on a large platter. Garnish with chopped parsley and cilantro. Serve with lime wedges and the prepared sauces.
