    Prepare Salsa Butter

    In a bowl, mix softened butter with salsa until well combined. Set aside.

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent. Then add mushrooms, bell peppers, and fire roasted corn. Sauté for 5-7 minutes.

    Add Spinach

    Add fresh spinach to the skillet and cook until wilted. Season with salt and black pepper to taste.

    Combine with Salsa Butter

    Remove the skillet from heat and stir in the prepared salsa butter until the vegetables are well coated.

    Bake

    Preheat the oven to 375°F (190°C). Top the vegetable mixture with shredded cheese and place the skillet in the oven. Bake for 15-20 minutes until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool slightly. Serve warm with a dollop of sour cream on top.
