    Fry the Tortilla Chips

    Heat vegetable oil in a deep skillet or pot over medium heat. Cut the corn tortillas into wedges and fry them in batches until golden brown and crispy. Drain on paper towels and season with salt.

    In a large oven-safe skillet, spread a layer of refried beans at the bottom. Add a layer of the fried tortilla chips on top of the beans. Then, layer the shredded chicken or beef followed by a generous amount of queso, jack cheese, and cheddar cheese.

    Preheat the oven to 350°F (175°C). Place the skillet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
