Prepare the Chimichangas
Preheat the oven to 375°F (190°C). Lay the baby chimichangas on a baking sheet lined with parchment paper.

Add the Sauce
Drizzle the salsa or enchilada sauce evenly over the chimichangas.

Top with Cheese
Sprinkle the shredded cheese generously over the top of the sauced chimichangas.

Bake
Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.

Prepare the Sides
While the chimichangas are baking, heat the refried beans and Mexican rice in a saucepan over medium heat until warmed through.

Serve
Remove the chimichangas from the oven and let them cool for a minute. Serve them hot with the refried beans, Mexican rice, and sour cream on the side. Garnish with chopped cilantro if desired.
