Prepare the Tortillas
Warm the corn tortillas in a skillet or microwave until pliable.

Fill the Tortillas
Place a few tablespoons of shredded chicken in the center of each tortilla, roll them up, and place seam-side down in a greased baking dish.

Add Sauces
Pour the red enchilada sauce over one-third of the enchiladas, the green enchilada sauce over another third, and the white enchilada sauce over the remaining third.

Top with Cheese
Sprinkle shredded cheese evenly over the top of the enchiladas.

Bake
Preheat the oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes, or until the cheese is bubbly and golden.

Garnish and Serve
Remove from the oven, garnish with chopped cilantro, diced onions, and sliced jalapeños. Serve with sour cream on the side.
