Cook the Rice
In a pot, combine the long-grain rice, vegetable broth, diced tomatoes, chili powder, and diced onion. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
Diced Cucumber

Dice the Cucumber
Wash and peel the cucumber if desired. Cut it into small cubes.
Roasted Corn

Roast the Corn
Preheat the oven to 400°F (200°C). Toss the corn kernels with olive oil and salt. Spread on a baking sheet and roast for 20 minutes, stirring halfway.
Fries

Prepare the Fries
Preheat oven to 425°F (220°C). Cut potatoes into fries, toss with olive oil and salt. Spread on a baking sheet and bake for 25-30 minutes until golden and crispy.
Orange Wedges

Cut the Orange
Peel and slice the orange into wedges.
Diced Avocado

Dice the Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Dice into small cubes.
