Prepare the Carnitas
In a slow cooker, combine the pork shoulder, cumin, salt, and black pepper. Add enough water to cover the pork, cover, and cook on low for 8 hours or until the pork is tender and shreds easily.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded pork to the cooker and mix it with the juices.

Assemble the Taquitos
Preheat the oven to 400°F (200°C). Take a corn tortilla, place a spoonful of carnitas and a sprinkle of cheddar cheese in the center. Roll it tightly and place seam-side down on a greased baking sheet.

Prepare the Dipping Sauce
In a bowl, mix sour cream, minced jalapeño, and hot sauce. Adjust spice level to taste.

Serve the taquitos hot with the dipping sauce on the side.
