Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Filling
In a large bowl, combine the shredded chicken, ground beef, pork carnitas, and braised beef. Mix in 2 cups of red chile sauce until well combined.

Assemble the Burritos
Lay out a flour tortilla and place a generous amount of the meat mixture in the center. Top with shredded cheese, diced tomatoes, and jalapeños if desired. Roll the tortilla tightly to enclose the filling.

Arrange in Baking Dish
Place the rolled burritos seam-side down in a large baking dish. Repeat until all the tortillas and filling are used.

Add Sauce and Cheese
Pour the remaining red chile sauce over the top of the burritos and sprinkle with any remaining shredded cheese.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven, let cool for a few minutes, and garnish with sour cream and chopped cilantro before serving.
