Chipotle BBQ Chicken Tenders

    Prepare the Tortillas

    Heat olive oil in a skillet over medium heat. Brush both sides of each corn tortilla with olive oil and sprinkle with salt.

    Fry the Tortillas

    Fry the tortillas in the skillet until crispy and golden, about 2-3 minutes per side. Remove and drain on paper towels.

    Add Cheese

    Sprinkle shredded Monterey Jack cheese over the hot tortillas and allow it to melt slightly before serving.

Hector's Quesadilla

    Prepare the Filling

    In a bowl, mix together shredded chicken, diced bell pepper, and cheese.

    Cook the Quesadilla

    Heat olive oil in a skillet over medium heat. Place a flour tortilla in the skillet, add the filling, then top with another tortilla. Cook until golden brown, about 3-4 minutes per side. Repeat with remaining tortillas.

    Cut into wedges and serve with sour cream.

Chipotle BBQ Chicken Tenders
