Waffle Fries

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into waffle fry shapes using a waffle fry cutter. If you don't have a cutter, you can use a knife to create a crisscross pattern.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This helps in achieving a crispier texture.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Make sure there is enough oil to fully submerge the fries.

Fry the Potatoes
Remove the potatoes from the water and pat them dry with paper towels. Once the oil is hot, carefully add a batch of fries to the oil. Fry until golden brown and crispy, about 5-7 minutes.

Season the Fries
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. Immediately sprinkle with Cajun seasoning and salt while they are still hot. Toss to coat evenly.

Prepare the Sauce
In a bowl, combine the sour cream and Cajun seasoning. Mix well until the seasoning is evenly distributed throughout the sour cream.

Serve the crispy waffle fries hot with the seasoned sour cream on the side for dipping.
