    Prep the Roast

    Remove the double cut prime rib roast from the refrigerator and let it sit at room temperature for at least 1 hour before cooking. This will ensure even cooking.

    Season the Roast

    In a small bowl, combine kosher salt, black pepper, garlic powder, and dried rosemary. Rub the mixture all over the prime rib, ensuring to cover all sides. Drizzle with olive oil and rub it in as well.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting rack set in a roasting pan. Roast for 20 minutes at 450°F to get a nice crust.

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue to roast until the internal temperature reaches your desired doneness: about 1 hour for medium-rare (130°F to 135°F).

Resting and Serving

    Remove the prime rib from the oven and tent it loosely with aluminum foil. Allow it to rest for at least 20-30 minutes to let the juices redistribute.
