Preparing the Base

Rinse the Sushi Rice
In a fine mesh sieve, rinse 1 cup of sushi rice under cold water until the water runs clear.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Cube the Tuna
Carefully cut the 8 oz of fresh sushi-grade tuna into small, bite-sized cubes.

Mix the Ingredients
In a mixing bowl, combine the cubed tuna, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 teaspoon of sriracha. Add in 2 tablespoons of chopped green onions and 1 tablespoon of sesame seeds. Gently toss to combine.
