Bao Bun Preparation

Mix the Dough
In a large bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until bubbly. Add flour, baking powder, salt, and vegetable oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth. Form into a ball.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Buns
Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball, then flatten it into a round disc.

Steam the Buns
Place each disc on a small square of parchment paper. Steam in a bamboo steamer over boiling water for about 10-12 minutes until fluffy.

Prepare the Pickled Carrots
In a saucepan, combine rice vinegar, sugar, salt, and water. Bring to a boil, then pour over the julienned carrots in a bowl. Let them pickle for at least 30 minutes.

Cook the Tenderloin
Season the tenderloin with salt and pepper. Grill or sear on high heat until medium-rare (about 5-7 minutes per side). Let it rest for 5 minutes, then slice thinly.
