Crust

Roasted Peaches

Method

Crust Preparation

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

  2. 2

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes, then remove from the oven and let cool.

Filling Preparation

  1. 3

    Mix the Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar and continue to mix until well blended.

  2. 4

    Add Remaining Ingredients

Add the sour cream, vanilla extract, and bourbon to the cream cheese mixture. Mix until fully incorporated.

  3. 5

    Incorporate Eggs

Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

Baking the Cheesecake

  1. 6

    Combine and Bake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly.

  2. 7

    Cool and Refrigerate

Once baked, turn off the oven and crack the door, allowing the cheesecake to cool in the oven for about 1 hour. Then refrigerate for at least 4 hours or overnight.

Roasting Peaches

  1. 8

    Prepare the Peaches

While the cheesecake is cooling, preheat your oven to 400°F (200°C). In a bowl, toss the sliced peaches with brown sugar, cinnamon, and melted butter.

  2. 9

    Roast the Peaches

Spread the peach mixture on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes or until the peaches are soft and caramelized.

Assembly and Serving

  1. 10

    Top the Cheesecake

Once the cheesecake is fully chilled, remove it from the springform pan and place it on a serving platter. Top with the roasted peaches.

  2. 11

    Serve

Slice the cheesecake and serve it chilled. Enjoy your Roasted Peach and Bourbon Cheesecake!
