Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Mix well to form a marinade.

  2. 2

    Marinate the Steak

Place the ribeye steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or up to overnight for more flavor).

Cooking

  1. 3

    Preheat the Grill or Pan

Preheat your grill or a heavy skillet over medium-high heat for about 5-10 minutes until hot.

  2. 4

    Cook the Steak

Remove the ribeye steaks from the marinade and let any excess drip off. Place the steaks on the hot grill or skillet. Cook for about 4-5 minutes on one side for medium-rare, then flip and cook for an additional 4-5 minutes on the other side.

  3. 5

    Add Butter and Thyme

During the last minute of cooking, add butter and fresh thyme sprigs to the skillet or grill. Use a spoon to baste the melted butter over the steaks for added flavor.

  4. 6

    Rest the Steak

Once cooked to your desired doneness, remove the steaks from the grill or skillet and let them rest on a cutting board for about 5 minutes before slicing.
