Prepare the Prime Rib

Preheat your oven to 450°F (232°C). In a small bowl, combine kosher salt, black pepper, minced garlic, fresh rosemary, and olive oil. Rub this mixture all over the prime rib roast, ensuring it is evenly coated.

Roast the Prime Rib
Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes to develop a crust. After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare.

Once cooked to your desired doneness, remove the roast from the oven and loosely cover it with aluminum foil. Let it rest for at least 20-30 minutes before slicing.
Make the Au Jus

Prepare the Au Jus
While the meat is resting, pour the drippings from the roasting pan into a saucepan. Skim off excess fat, leaving about 2 tablespoons. Add beef broth and red wine (if using) to the pan, along with Worcestershire sauce and fresh thyme. Bring to a simmer over medium heat, seasoning with salt and pepper to taste.

Reduce the Sauce
Let the sauce simmer for about 10-15 minutes, allowing it to reduce slightly and intensify in flavor. Strain if desired, then keep warm.
