Method
Prepare the Prime Rib
- 1
Season the Roast
Preheat the oven to 450°F (232°C). Rub the prime rib roast all over with salt, black pepper, garlic powder, and onion powder. Make sure to coat evenly.
- 2
Roast the Meat
Place the seasoned roast in a roasting pan. Roast in the preheated oven for 20 minutes. Then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- 3
Rest the Roast
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
Make the Broth
- 4
Combine Ingredients
In a large pot, combine the beef broth, Worcestershire sauce, fresh thyme, and bay leaves. Bring to a boil over medium-high heat.
- 5
Simmer
Reduce the heat to low and let the broth simmer for about 30 minutes to allow the flavors to meld. Remove the bay leaves before serving.
Assemble the Sandwiches
- 6
Slice the Roast
Thinly slice the rested prime rib roast against the grain.
- 7
- 8
Build the Sandwiches
Layer sliced prime rib on the bottom half of each toasted roll. Top with provolone cheese and place the other half of the roll on top.
Serve
- 9
Serve with Broth
Serve the sandwiches with a small bowl of the broth for dipping. Enjoy your Prime Rib French Dip!
