Preparation of Oysters
- 1
Clean the Oysters
Rinse the fresh oysters under cold water to remove any sand and debris. Scrub the shells with a brush to ensure they are clean.
- 2
Shuck the Oysters
Using an oyster knife, carefully shuck the oysters. Discard the top shell and place the oysters in the bottom shell on a tray. Reserve the liquor (the liquid inside the oyster) for later use.

Prepare the Baking Tray
Preheat the oven to 400°F (200°C). Spread the rock salt evenly over a baking tray to create a base for the oysters.

Fill the Oysters
Spoon a generous amount of the topping mixture onto each oyster, pressing it down slightly to adhere.
- 8
Bake the Oysters
Place the filled oyster shells on the bed of rock salt in the baking tray. Bake in the preheated oven for about 10-12 minutes, or until the topping is golden brown and bubbly.
Serving

Serve Hot
Remove the baking tray from the oven and let the oysters cool slightly. Serve them hot, garnished with additional parsley if desired.
