    Peel the Russet potatoes and shred them using a box grater or a food processor. Place the shredded potatoes in a bowl of cold water to remove excess starch. Let them soak for about 15 minutes.

    After soaking, drain the potatoes and spread them out on a clean kitchen towel. Pat them dry as thoroughly as possible to remove excess moisture which will help them crisp up.

    Season the Potatoes

    In a mixing bowl, combine the shredded potatoes with salt and pepper. Toss to evenly distribute the seasonings.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Sauté the Onion and Garlic

    Add the finely chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onion is translucent and fragrant.

    Cook the Hashbrowns
