    Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl, cover with cold water, and let them soak for about 15 minutes to remove excess starch.

    After soaking, drain the potatoes and rinse them under cold water. Use a clean kitchen towel to thoroughly squeeze out any excess moisture.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium heat until shimmering.

    Cook the Onions and Garlic

    Add the finely chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
