    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the whole lobsters and cook for about 8-10 minutes until bright red and cooked through. Remove the lobsters from the pot and let them cool. Once cool, remove the meat from the claws and tails, chop it into bite-sized pieces, and set aside. Reserve the shells for later.

    Chop the Vegetables

    Finely chop the onion, carrot, celery, and garlic. Set aside.

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté for about 5-7 minutes until softened.

    Add Tomato Paste and Brandy

    Stir in the tomato paste and cook for an additional 2 minutes. Then, carefully add the brandy and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.

    Add Fish Stock and Seasonings

    Add the fish stock, thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.

    Blend the Soup

    Remove the bay leaf and blend the soup using an immersion blender until smooth. If using a countertop blender, allow it to cool slightly before blending in batches.

    Add Heavy Cream and Lobster Meat

    Return the blended soup to the pot. Stir in the heavy cream and the chopped lobster meat. Heat gently over low heat until warmed through.

Serving

    Garnish and Serve

    Serve the bisque hot in bowls, garnished with chopped chives and a sprinkle of lemon zest for added freshness.
