Preparation

Cook the Lobster
If using whole lobsters, boil or steam them for about 8-10 minutes until cooked. Remove the meat from the shells and chop into bite-sized pieces.

Sauté the Spinach
In a skillet, melt 1 tablespoon of butter over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper. Remove from heat and set aside.

Prepare the Hollandaise Sauce
If not using store-bought, prepare hollandaise sauce according to your recipe or instructions. Keep it warm until ready to serve.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Use a slotted spoon to remove the eggs and drain on paper towels.

Toast the English Muffins
Slice the English muffins in half and toast them until golden brown. Spread the remaining tablespoon of butter on each half.
