Strawberry Ginger Syrup

Prepare the Ingredients
Wash the fresh strawberries thoroughly. Remove the stems and cut them into halves. Peel and slice the fresh ginger.

Simmer and Reduce
Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally, until the strawberries have broken down and the syrup thickens.

Strain the Syrup
Remove the saucepan from heat. Use a fine mesh strainer to strain the mixture into a clean jar or bowl, discarding the solids. Stir in the lemon juice for added brightness.

Cool the Syrup
Allow the syrup to cool to room temperature, then refrigerate it until ready to use. It can be stored in an airtight container for up to one week.
Seltzer Drink

Prepare the Glass
In a tall glass, add a few ice cubes to cool the drink.

Mix the Drink
Pour 1/4 cup of the prepared strawberry ginger syrup over the ice. Top it off with 3/4 cup of seltzer water, stirring gently to combine.

Garnish the Drink
Garnish the drink with fresh strawberries and a slice of lemon on the rim of the glass.
