Dough Preparation

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour and salt. Whisk together until well mixed.

    Cut in Butter

    Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. You may not need all the water.

    Form Dough

    Turn the dough onto a lightly floured surface and knead gently just until it holds together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Prepare Fruit Filling

    In a medium bowl, combine the chopped fresh fruits, granulated sugar, cornstarch, cinnamon, and lemon juice. Toss until the fruits are well coated and set aside.

Assembly and Baking

    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into squares or circles, depending on your desired pastry shape.
