For the Beef

    Prepare the Roast

    Preheat your oven to 325°F (163°C). In a large roasting pan, place the beef chuck roast. Season it generously with salt, black pepper, and dried thyme on all sides.

    Add Aromatics

    Chop the onion and mince the garlic cloves. Scatter them around the roast in the pan.

    Add Broth and Sauce

    Pour the beef broth and Worcestershire sauce over the roast and aromatics. Ensure the liquid covers at least half of the roast.

    Roast the Beef

    Cover the pan with aluminum foil and roast in the preheated oven for about 3 to 4 hours, or until the meat is fork-tender.

    Rest the Meat

    Once done, remove the roast from the oven and let it rest for 15-20 minutes before slicing.

For the Sandwiches

    Prepare Rolls

    While the beef rests, slice the hoagie rolls in half lengthwise without cutting all the way through.

    Spread butter on the insides of each roll and place 2 slices of provolone cheese on each side.

    Place the rolls under the broiler for 2-3 minutes until the cheese is melted and bubbly.

    Thinly slice the roast beef against the grain and pile it high inside the broiled rolls.

    In a saucepan, combine the reserved beef broth from the roasting pan, soy sauce, and black pepper. Heat over medium heat until warmed through.
