    Prep the Onions

    Slice the onions into thin rings. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and a pinch of salt, and cook for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.

    Cook the Mushrooms

    In the same skillet, add another tablespoon of olive oil. Once hot, add the sliced mushrooms, season with black pepper, and cook for about 5-7 minutes until they are browned and tender.

    Cook the Bacon

    In a separate skillet, cook the Nueske's bacon over medium heat until crispy. Remove and let drain on paper towels.

    Cook the Filet Steak

    Season the filet steaks with salt and pepper. In the skillet used for the bacon, sear the filets over medium-high heat for about 4-5 minutes on each side for medium-rare, or adjust cooking time for desired doneness.

    Assemble the Sandwich

    Slice the crusty sandwich rolls in half. On the bottom half, layer the cooked filet steak, followed by the caramelized onions, mushrooms, a slice of Swiss cheese, and the crispy bacon. Top with the other half of the roll.

    Serve

    Press down slightly on the sandwich to compact it. Optionally, grill the sandwich on a skillet or panini press for 2-3 minutes until the cheese melts and the bread is golden brown. Cut in half and serve immediately.
