Bring Steaks to Room Temperature
Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook evenly.

Generously season both sides of the steaks with kosher salt and black pepper. Make sure the seasoning adheres well to the meat.
