Preparation and Cooking

    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steaks

    Rub both sides of the steaks with olive oil, then sprinkle generously with salt and black pepper.

    Preheat the Skillet

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until it is very hot.

    Sear the Steaks

    Place the seasoned filet mignon steaks in the hot skillet and sear for about 3-4 minutes on each side for medium-rare. Adjust the time based on desired doneness.

    Add Butter and Herbs

    In the last minute of cooking, add butter and fresh rosemary to the skillet. Spoon the melted butter over the steaks for added flavor.

    Remove and Rest

    Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.

    Prepare Optional Red Wine Sauce

    If using, add minced garlic and mushrooms to the skillet after removing the steaks. Sauté for a few minutes, then deglaze with red wine, scraping up any browned bits. Let it reduce for about 5 minutes before serving with the steaks.
