Filet Mignon

Method

Preparing the Filet Mignon

    Season the Steak

    Sprinkle salt and black pepper evenly over both sides of the filet mignon steak.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Once hot, add the seasoned filet mignon. Sear each side for about 4-5 minutes for medium-rare, or until desired doneness.

    Rest the Steak

    Once cooked, remove the steak from the skillet and let it rest on a plate for about 5 minutes before serving.

Making the Béarnaise Sauce

    Prepare the Reduction

    In a small saucepan, combine shallots, white wine vinegar, and dry white wine. Bring to a boil and reduce to medium heat, simmer for about 5 minutes until the mixture reduces by half.

    Melt the Butter

    In a separate saucepan, melt the unsalted butter over low heat until fully melted.

    Whisk Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and the reduced shallot mixture until well combined.

    Combine and Whisk

    Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the melted butter until the sauce thickens and becomes creamy.

    Add Tarragon and Season

    Remove the sauce from heat and stir in chopped tarragon. Season with salt and black pepper to taste.
