Preparing the Filet Mignon

Season the Steak
Sprinkle salt and black pepper evenly over both sides of the filet mignon steak.

Making the Béarnaise Sauce

Prepare the Reduction
In a small saucepan, combine shallots, white wine vinegar, and dry white wine. Bring to a boil and reduce to medium heat, simmer for about 5 minutes until the mixture reduces by half.

Melt the Butter
In a separate saucepan, melt the unsalted butter over low heat until fully melted.

Whisk Egg Yolks
In a heatproof bowl, whisk together the egg yolks and the reduced shallot mixture until well combined.

Add Tarragon and Season
Remove the sauce from heat and stir in chopped tarragon. Season with salt and black pepper to taste.
