    Prepare the English Muffins

    Split the English muffins in half and toast them until golden brown. Set aside.

    Cook the Canadian Bacon

    In a skillet over medium heat, cook the Canadian bacon or ham until heated through and slightly crispy (about 2-3 minutes per side). Set aside.

    Poach the Eggs

    In a large pot, bring water to a gentle simmer and add a splash of vinegar. Crack each egg into a small bowl and gently slide them into the water one at a time. Poach the eggs for about 3-4 minutes or until the whites are set and yolks are still runny. Remove with a slotted spoon and set on a paper towel to drain.

    On each toasted English muffin half, place a slice of Canadian bacon, followed by a poached egg. Drizzle with hollandaise sauce and garnish with chopped parsley.
