Steak Preparation

    Prepare the Steak

    Take the porterhouse steaks out of the refrigerator and let them rest at room temperature for at least 30 minutes before cooking.

    Season the Steak

    Rub both sides of the steaks with olive oil, then season generously with kosher salt and freshly ground black pepper.

Cooking the Steak

    Preheat the Grill or Pan

    Preheat your grill to high heat, or heat a large cast-iron skillet over medium-high heat for about 5 minutes.

    Sear the Steak

    Place the steak on the grill or skillet. Cook for 4-5 minutes on one side until a nice crust forms, then flip the steak.

    Add Aromatics

    After flipping, add the garlic cloves and rosemary sprigs to the pan or on the grill. Cook for an additional 4-5 minutes for medium-rare.

    Baste with Butter

    In the last minute of cooking, add the butter to the pan and baste the steak with the melted butter using a spoon.

    Check Temperature

    Use a meat thermometer to check for doneness. Aim for an internal temperature of 130°F for medium-rare.

Resting and Serving

    Rest the Steak

    Remove the steak from the grill or skillet and let it rest for 5-10 minutes to allow the juices to redistribute.

    Slice and Serve

    Slice the steak against the grain into thick slices. Serve with sides of your choice.

Optional Side Preparation

    Prepare Asparagus

    Wash and trim the asparagus. Toss with olive oil, salt, and pepper. Grill or roast for about 8-10 minutes.

    Prepare Baby Potatoes

    Boil baby potatoes until fork-tender, about 15 minutes. Drain and toss with olive oil, salt, and pepper before serving.
