Prepare Filling

Cook Somen Noodles
Bring a pot of salted water to a boil. Add the somen noodles and cook according to package instructions, usually around 4-5 minutes. Drain and rinse under cold water. Set aside.

Chop Scallions
Finely chop the scallion stalks, including both the white and green parts.

Mix Filling
In a mixing bowl, combine the cooked somen noodles, king crab meat, chopped scallions, and yuzu ponzu. Gently mix until well combined.
Prepare Spicy Mayo

Combine Ingredients
In a small bowl, mix together the mayonnaise, sriracha, and lemon juice until smooth. Adjust the spiciness according to your taste.
Assemble Spring Rolls

Prepare Wrappers
Lay a spring roll wrapper on a clean, dry surface with one corner pointing towards you.

Fill Wrapper
Place about 2 tablespoons of the crab filling near the corner of the wrapper closest to you. Fold the corner over the filling, then fold in the sides and roll tightly away from you.

Seal the Rolls
Use a little water to moisten the top corner of the wrapper to seal the spring roll. Repeat with remaining wrappers and filling.

Heat Oil
In a deep pan or fryer, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry Spring Rolls
Carefully add the spring rolls to the hot oil in batches, frying for 3-4 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
