Method

Prepare the Blinis

    Mix the Batter

    In a bowl, combine the all-purpose flour, yeast, and salt. In a separate bowl, warm the milk slightly and then whisk in the egg. Gradually add the wet mixture to the dry ingredients, stirring until smooth.

    Let it Rise

    Cover the batter with a cloth and let it rise in a warm place for about 1 hour or until it has doubled in size.

    Cook the Blinis

    Heat a non-stick skillet over medium heat and melt a bit of butter. Pour small amounts of batter (about 1 tablespoon each) into the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter.

Assemble the Dish

    Slice the Salmon

    Thinly slice the smoked Scottish salmon into strips.

    Plate the Components

    On a serving platter, arrange the blinis, dollops of crème fraiche, slices of smoked salmon, and small spoonfuls of Osetra caviar.

    Encourage guests to create their own bites by layering the salmon, crème fraiche, and caviar on the blinis. Enjoy!
