Heirloom Tomato Bruschetta

Prepare the Bread
Slice the baguette or ciabatta bread into 1/2-inch thick slices and toast them lightly in the oven at 400°F (200°C) for about 5-7 minutes until golden.

Prepare the Topping
Dice the heirloom tomatoes and chop the fresh basil leaves. In a bowl, mix the tomatoes, basil, Boursin cheese, balsamic vinegar, and olive oil. Season with salt and pepper to taste.

Assemble
Spoon the tomato mixture generously over the toasted bread slices. Serve immediately.
Roasted Oyster Mushroom Bruschetta

Prepare the Bread

Roast the Mushrooms
Preheat the oven to 375°F (190°C). Clean the oyster mushrooms and toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until golden brown.

Crumble the goat cheese and chop the chives. Once the mushrooms are roasted, combine them with the goat cheese and drizzle with truffle oil.

Spoon the mushroom mixture generously over the toasted bread slices. Garnish with chopped chives and serve immediately.
Shallot Jam and Brie Bruschetta

Prepare the Bread

Make the Shallot Jam
In a saucepan, heat olive oil over medium heat. Add finely chopped shallots and sauté until soft. Add sugar and apple cider vinegar, stirring until the mixture thickens, about 10 minutes. Remove from heat and let cool.

Slice the triple cream brie and prepare pickled onions.
