    In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the seasoned short ribs and sear them for about 3-4 minutes on each side until they are browned. Remove the ribs and set them aside.

    In the same pot, add the chopped onions, carrots, and celery. Cook for about 5-7 minutes until they are softened. Add the minced garlic and cook for an additional minute until fragrant.

    Pour in the red wine to deglaze the pot, scraping up any brown bits stuck to the bottom. Allow the wine to cook down for about 5 minutes.
