Preparation

- 2
Marinate the Tenderloin
Place the bone-in beef tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the meat, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Cooking
- 3
Preheat the Oven
Preheat your oven to 220°C (425°F).
- 4
Sear the Tenderloin
In a large oven-safe skillet, heat 2 tablespoons of butter over medium-high heat. Remove the tenderloin from the marinade (discard the marinade) and place it in the skillet. Sear all sides of the tenderloin until browned, about 3-4 minutes per side.
- 5
Roast the Tenderloin
Transfer the skillet with the seared tenderloin to the preheated oven. Roast for 25-30 minutes for medium-rare, or until the internal temperature reaches 57°C (135°F).
- 6
Add Fresh Herbs
In the last 5 minutes of cooking, sprinkle fresh thyme over the tenderloin for added flavor.
- 7
Rest the Meat
Once cooked, remove the tenderloin from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
Serving
- 8
Slice and Serve
Slice the tenderloin into thick slices and serve warm. This dish pairs well with roasted vegetables or a fresh salad.
