Beef Tenderloin

Method

Preparation of Beef Tenderloin

    Trim and Cut

    Trim the beef tenderloin of any excess fat and silverskin. Cut the tenderloin into 2-inch thick medallions.

    Seasoning

    Season the beef medallions generously with salt and black pepper on both sides.

    Sear the Beef

    In a large skillet, heat olive oil over medium-high heat. Add the beef medallions and sear for about 3-4 minutes on each side until nicely browned.

Charmoula Marinade

    Prepare Charmoula

    In a mixing bowl, combine chopped cilantro, parsley, minced garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Mix well to form a marinade.

    Marinate the Beef

    Add the seared beef medallions to the charmoula marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Blue Cheese Sauce

    Make the Sauce

    In a medium bowl, combine blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and creamy. Adjust seasoning as needed.

Cooking and Serving

    Cook the Beef

    Preheat the grill or broiler to medium-high heat. Remove beef from marinade and thread onto skewers, inserting a skewer through the center of each medallion.

    Grill the Lollipops

    Grill the beef lollipops for about 5-6 minutes per side for medium-rare, or until desired doneness is achieved.
