Chocolate Mousse

    Melt the Chocolate

    Chop the dark chocolate and melt it in a heatproof bowl over simmering water. Stir until fully melted and smooth.

    In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

    Prepare Egg Mixture

    In another bowl, whisk the egg yolks with sugar and vanilla extract until pale and creamy.

    Combine Mixtures

    Gently fold the melted chocolate into the egg mixture, then carefully fold in the whipped cream until fully incorporated.

    Spoon the mousse into serving dishes and chill in the refrigerator for at least 2 hours before serving.

    Prepare the Crust

    Preheat the oven to 180°C (350°F). Place the shortcrust pastry into a pie dish and prick the bottom with a fork. Bake for 15 minutes or until golden. Let it cool.
