Prepare the Pie Crust
In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add Water
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

Chill the Dough
Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apples
Peel, core, and slice the apples into thin slices.

Mix the Filling
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract. Toss well to coat the apples evenly.

Add Filling
Pour the apple filling into the prepared crust, spreading it evenly.

Top the Pie
Roll out the second disc of dough and place it over the filling. Cut slits for steam vents or create a lattice top. Trim and crimp the edges to seal.

Brush the top crust with milk and sprinkle with granulated sugar.

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Allow the pie to cool for at least 30 minutes before slicing. Serve warm with a scoop of vanilla ice cream.
