Method
Smoked Cheddar Pimento Cheese
Make pimento cheese
In a medium bowl, combine the softened cream cheese and mayonnaise with a spatula until smooth. Stir in the grated smoked cheddar, chopped roasted pimentos, Dijon mustard, smoked paprika, lemon juice, salt, and black pepper until evenly distributed. Taste and adjust seasoning. Refrigerate while you cook the burgers to let flavors meld (at least 15 minutes).
Burgers
Form and season patties
Divide the 1 lb ground Angus into two equal portions (about 8 oz each). Gently form each portion into a loose patty about 3/4"–1" thick and slightly wider than the bun. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to help prevent bulging. Season both sides evenly with kosher salt and freshly ground black pepper, and brush or rub 1/2 tbs Worcestershire sauce over each patty.
Cook patties
Heat a heavy skillet, cast-iron griddle, or grill over medium-high heat and add 1 tsp vegetable oil to lightly coat. When the pan is very hot (it should shimmer), add the patties. Cook about 3–4 minutes on the first side without moving to develop a crust. Flip and cook 3–4 minutes more for medium (internal 145–155°F). For cheeseburgers, during the last 1 minute of cooking, dollop about 1/3 cup (roughly half the prepared pimento cheese per burger) of the smoked cheddar pimento cheese onto each patty and cover the pan with a lid or tent with foil so the cheese softens and warms but does not fully melt away.
Buns & Toppings
Toast buns
Split the buns and spread 1 tbs mayonnaise on the cut sides of each top and bottom. Place buns cut-side down in a clean skillet or on the grill over medium heat for 1–2 minutes until lightly golden and toasted. Remove and keep warm.
Assemble burgers
Place a lettuce leaf on the bottom bun, add the hot burger patty topped with smoked cheddar pimento cheese, then layer 2–3 onion rings and one or two tomato slices. Spread additional mayonnaise on the inside of the top bun if desired, then close the burger. Serve with dill pickle chips on the side.
Fries
Cook fries
Prepare fries according to package instructions. Oven: preheat to 425°F (220°C), arrange fries in a single layer on a baking sheet, lightly spray with oil, bake 18–22 minutes turning once until golden and crisp. Air fryer: preheat to 400°F (200°C) and cook for 10–14 minutes, shaking once, until crisp. Immediately season with 1/4 tsp kosher salt.
Plate
Serve fries alongside the assembled burger with dill pickle chips and any extra pimento cheese available for spreading or dipping.
