Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Drizzle olive oil over both sides of the steaks. Sprinkle salt and black pepper evenly on both sides. Let the steaks sit at room temperature for about 30 minutes to absorb the seasoning.

Mojo de Ajo Sauce Preparation

Prepare the Garlic
Peel the garlic cloves and set aside.

Make the Sauce
In a small saucepan, heat 1 cup of olive oil over medium heat. Add the peeled garlic cloves and sauté until they turn golden brown, about 5-7 minutes. Remove from heat and let it cool slightly.

Blend the Sauce
Transfer the sautéed garlic and oil to a blender. Add lemon juice, fresh parsley, and salt. Blend until smooth and well combined. Adjust seasoning to taste.
Serving

Serve the Steak
Once the steaks are cooked to your liking, remove them from the heat and let them rest for 5 minutes. Slice the steaks against the grain and serve with a generous drizzle of mojo de ajo sauce on top.
