Shrimp Marinade

    Prepare the Marinade

    In a large bowl, combine achiote paste, olive oil, lime juice, minced garlic, salt, and black pepper. Mix well.

    Marinate the Shrimp

    Add the peeled and deveined shrimp to the marinade and toss to coat the shrimp evenly. Cover and refrigerate for at least 30 minutes.

Coconut Crema

    Make the Coconut Crema

    In a small bowl, whisk together coconut cream, lime juice, and salt to taste. Adjust seasoning as desired and set aside.

Poblano Relish

    Prepare the Poblano Relish

    In a medium bowl, combine diced poblano pepper, red onion, tomato, chopped cilantro, lime juice, and salt to taste. Mix well and let sit for 10 minutes for flavors to meld.

Cooking the Shrimp

    Cook the Shrimp

    Heat a grill or a skillet over medium-high heat. Once hot, add the marinated shrimp and cook for about 2-3 minutes on each side or until shrimp are opaque and cooked through.

Assembly

    Serve

    To serve, place the cooked shrimp on a plate, drizzle with coconut crema, and top with poblano relish. Garnish with fresh cilantro leaves.
