Cooking Rice

Prepare Rice
Rinse the long grain white rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.

Simmer Rice
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes until all the water is absorbed and the rice is tender.

In a small saucepan over medium heat, add 1 can of pinto beans (drained and rinsed) along with 1 tsp of cumin and 1 tsp of garlic powder. Stir to combine.

Cook Beans
Cook the beans for about 5-7 minutes, stirring occasionally, until heated through. Adjust the seasoning with salt if needed.
Making the Salsa

Mix Salsa
In a small bowl, combine the diced tomato, chopped cilantro, and onion. Drizzle with 1 tbsp of olive oil and mix well. Season with salt and pepper to taste.
Serving

Plate the Dish
To serve, place a generous scoop of the cooked rice on a plate, top with the heated pinto beans, and add a spoonful of the fresh salsa on top.

Optionally, garnish with additional cilantro or lime wedges for extra flavor.
