    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into 1-inch cubes. Place them in a large bowl and cover with cold water. Let them soak for at least 30 minutes to remove excess starch.

    Chop Vegetables

    While the potatoes are soaking, chop the red bell pepper, green bell pepper, and onion into small dice.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Season the Potatoes

    In a large mixing bowl, combine the dried potatoes with olive oil, garlic powder, paprika, dried oregano, salt, and black pepper. Mix well until the potatoes are evenly coated with the seasoning.

    Heat the Pan

    Heat a large skillet over medium-high heat. Once hot, add the potato mixture to the skillet in a single layer to ensure even cooking.

    Cook the Potatoes

    Cook the potatoes for about 10-15 minutes, flipping occasionally until they are golden brown and crispy on the outside. Add the chopped bell peppers and onion during the last 5 minutes of cooking, stirring them in to soften slightly.

    Serve

    Once the potatoes are crispy and the vegetables are tender, remove from heat. Serve hot as a delicious breakfast side dish.
