Method

Prepare the Fish

    In a shallow dish, combine the all-purpose flour, cornstarch, salt, and black pepper. Dredge the mahi mahi fillets in the mixture until fully coated.

    In a large skillet, heat the oil over medium-high heat. Once hot, add the coated fish fillets and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

Make the Slaw

    Combine Ingredients

    In a large bowl, combine the shredded red cabbage, grated carrot, and chopped mint leaves.

    Dress the Slaw

    In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Set aside to let flavors meld.

Prepare the Avocado Crema

    In a blender or food processor, combine the ripe avocados, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Assemble the Pescado
