Prepare the Meat

Cook the Ground Beef and Chorizo
In a skillet over medium heat, add the ground beef and chorizo. Cook until browned, about 7-10 minutes, breaking it apart with a spatula. Drain excess fat and set aside.

Heat the Pinto Beans
In a small saucepan, heat the pinto beans over medium heat until warmed through, about 5 minutes. Stir occasionally.
Prepare the Vegetables

Slice the Jalapeños
Remove the stems and seeds from the jalapeños and slice them into thin rings.

Make Avocado Crema
In a bowl, mash the avocado and mix in sour cream and lime juice until smooth and creamy. Season with salt to taste.
Assemble the Nachos

Layer the Nachos
On a large baking sheet or platter, spread out a layer of tortilla chips. Top with a generous amount of cooked meat, pinto beans, shredded cheddar cheese, pickled red onion, and jalapeños.

Melt the Cheese
Place the nachos under a broiler for 3-5 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning.
