Tostadas

Chorizo and Beans

Toppings

Method

Tostadas

  1. 1

    Fry the tortillas

Heat oil in a frying pan over medium heat. Once hot, fry each corn tortilla for about 1-2 minutes on each side until they are crispy and golden brown. Remove from oil and drain on paper towels.

Chorizo and Beans

  1. 2

    Cook the chorizo

In a separate skillet, over medium heat, add the chorizo sausage. Cook, breaking it apart with a spoon, until it is browned and cooked through, about 5-7 minutes.

  2. 3

    Add onion and garlic

Add the diced onion and minced garlic to the skillet with the chorizo. Sauté until the onions are translucent, about 3-4 minutes.

  3. 4

    Add black beans

Stir in the canned black beans, cumin, and salt. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

Assembly

  1. 5

    Build the huevos rancheros

On each corn tostada, layer the chorizo and black bean mixture. Top with crumbled queso fresco, chopped cilantro, and drizzle with hot sauce according to your taste.
