Method

Preparation

  1. 1

    Prepare the Peppers

Wash the jalapeño peppers thoroughly under cold water. Remove the stems and chop them into quarters. For a milder sauce, you can remove the seeds.

  2. 2

    Prepare the Garlic

Peel the garlic cloves and leave them whole.

Cooking

  1. 3

    Combine Ingredients

In a medium saucepan, combine the chopped jalapeño peppers, whole garlic cloves, white vinegar, salt, and sugar. If using, also add smoked paprika and lime juice.

  2. 4

    Simmer the Mixture

Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes until the peppers are tender.

  3. 5

    Blend the Sauce

Remove the saucepan from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. If desired, add cilantro for extra flavor and blend again until well combined.

Finishing

  1. 6

    Strain the Sauce (Optional)

For a smoother sauce, you can strain the blended mixture through a fine mesh sieve to remove the pulp. Use a spatula to press the sauce through.

  2. 7

    Bottle and Store

Pour the hot sauce into a clean bottle or jar. Let it cool completely before sealing. Store in the refrigerator for up to 4 weeks.
